SLICED ONIONS

Grilled Chicken Salad

Ingredients
3/4 pound boneless, skinless chicken breasts
1 package Gills Fresh Sliced Red or Yellow Onions
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1-1/2 cups zucchini, diagonally sliced
1 14 ounce can artichoke hearts, drained
1/2 medium red pepper, cut into 1 inch squares
1/3 cup low calorie Italian salad dressing
1 teaspoon fresh basil leaves, chopped

Instructions
Season chicken with salt and black pepper. Grill chicken breasts. Add zucchini during last 5 minutes of grilling. Cover and chill chicken and zucchini; cut chicken into thin slices. Combine chicken, zucchini, artichokes, onions, and red pepper in large bowl. Blend dressing and basil in small bowl. Pour over salad; toss lightly. Serve on lettuce leaves. Makes 4 servings.

Low-Fat Grilled Chicken Fajitas

Ingredients
2 pounds boneless, skinless chicken
1 package Gills Fresh Sliced Red or Yellow Onions
1 red or green bell pepper, sliced
1/2 cup fresh mushrooms, sliced
2 teaspoons chili powder
1 lime, thinly sliced
1/4 teaspoon salt
2 tablespoon fresh lemon juice
1 cup chicken broth
8-10 warm whole-grain flour tortillas
1/2 cup non-fat Cheddar cheese, grated
8 ounces Lettuce, shredded
1 tomato, diced
1/2 cup non-fat sour cream

Instructions
In a bowl, combine chili powder, lemon juice, chicken broth and salt. Cut chicken into 1/2 inch strips and marinade in mixture for 20 minutes. Grill chicken over medium heat. During the last 10 minutes of grilling, place a piece of foil on grill and add onions, mushrooms, bell peppers, and lime (Remove lime before serving). Add ingredients into warm tortillas. Fold over. Top with non-fat sour cream, non-fat cheese, lettuce and tomatoes. Makes 4 to 5 servings.

Crispy Bacon BBQ Burgers

Ingredients
1-1/2 pounds lean ground beef
1 package Gills Fresh Sliced Red or Yellow Onions
8 ounces lettuce, shredded
8 ounces sweet pickle relish
8 slices bacon, cooked crisp
1 large tomato, sliced
1 avocado, sliced
8 ounces of your favorite BBQ sauce
Salt and pepper
8 slices Cheddar cheese
4 hamburger buns, split and toasted on grill

Instructions
Shape ground beef into four 3/4-inch patties and season with salt and pepper. Grill burgers 13 to 15 minutes to medium doneness (160 degrees), turning once. Remove patties from grill. Spread pickle relish on the bottom bun. Add each from the bottom up; lettuce, tomato, burger patty, cheese, onions, bacon, and avocado. Add BBQ sauce to bun and place on top. Makes 4 servings. WARNING: Burger will be very tall!
