DICED ONIONS

Cincinnati Chili

"Two way" (Sauce comes on a pile of spaghetti) "Three-way" (Spaghetti topped with chili and grated cheddar cheese) "Four-way" (Adds chopped onions) "Five-way" (Adds beans)

Ingredients
1-1/2 pounds lean ground sirloin
1 package Gills Fresh Diced Onions
1 (20 ounce) can tomato sauce
1 (14 ounce) can whole tomatoes
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1 teaspoon salt
1/2 teaspoon pepper
1-1/2 tablespoons chili powder
1 tablespoon vinegar
1 clove garlic
3 bay leaves

Instructions
Brown meat and chopped onions. Drain grease. Place meat and onions in a large pan or crockpot with all other ingredients. Cook slowly for 4 to 5 hours, covered.
Remove bay leaves and garlic before serving. Serve any way you like.

New England Clam Chowder

Ingredients
1/4 cup cut-up bacon or lean salt pork
1 package Gills Fresh Diced Onions
2 cans minced or whole clams, drained
(reserve liquid)*
1 cup finely chopped potato
1/2 teaspoon salt
Dash of pepper
2 cups milk

Instructions
Cook and stir bacon and onion in saucepan until bacon is crisp and onion is tender. Add enough water, if necessary, to reserved clam liquid to measure 1 cup. Stir clams, liquid, potato, salt and pepper into onion mixture. Heat to boiling. Cover and cook until potato is tender, about 15 minutes. Stir in milk. Heat, stirring occasionally, just until hot (do not boil). *1 pint shucked fresh clams with liquid can be substituted. Chop clams and add with the potatoes.

Nelia's Zesty Home-Style Salsa

Ingredients
1 cup Gills Fresh Diced Onions
2 cups chopped fresh tomatoes
3 tablespoons chopped cilantro leaves
2 tablespoons chopped jalapeno pepper
Salt
Fresh lime juice

Instructions
Combine ingredients in medium bowl, adding salt and lime juice to taste; cover and refrigerate until ready to serve. Makes 6 servings.
